The Ilve BC645STC temperature sink is part of the professional Plus line, a collection of appliances inspired by the kitchens of the best restaurants, designed to bring in the home space great qualities of robustness, ergonomics and operation.

The BC645STC temperature breaker is a recessed model black glass from capacity of 40 liters, and it is equipped with 11 functions, or:
- ABBATTIMENT
This function allows to quickly reduce the temperature to the heart of a freshly baked food, bringing it to +3°C, a useful level to interrupt the cooking process and prepare the food for subsequent manipulations. Reducing time permanence of food in the temperature range of bacteria proliferation extends the time of preservationfood itself.
- SURGELATION
The freezing process quickly brings food to the temperature of -18°C with the microcrystal technique. This avoids excessive liquid loss and the resulting weight loss in the subsequent phase of defrosting. The procedure allows you to keep food for several months. - SUMMARY
The breaker manages the phase of defrosting of a food according to the mode “controlled air temperature”, which allows to bring a food from freezing temperature to that of 1÷3°C without losing liquids and without starting cooking. Defreeze food progressively allows to maintain intact consistency and structure, avoiding the transformation of proteins that you have, for example, with the defrosting of meat with microwave.
- TABLE PRODUCTS
This function allows to heat a previously baked and stored food in the refrigerator and serve it at the table at the correct consumption temperature, or to program its availability at the desired temperature, postponeing until 10 hours the heating of food.
- LENTA COTTURE
This function makes it possible to cook a food slowly, at a constant low temperature for a given time. It is the ideal cooking mode for the sous saw, because it allows to safeguard the structure of the food by not subjecting them to high thermal stress and not dispersing its nutritional values.
- LIEVITATION
Using this function you can make a dough rise by choosing three different operating modes: “Immediate”, “Conserved”, “Retarded”. In each of them, the machine allows to set the air temperature, the duration and the humidity level, for a perfect control of leavening.
